Ingredients

  • 2 medium sized field tomatoes
  • 1 field cucumber
  • 2 tablespoons olive oil
  • salt and pepper to taste

Preparation

  1. Gently wash and dry tomatoes and cucumber, remove stem ends and dice to size of choice.
  2. Place in small bowl, lightly drizzle with olive oil, add salt and pepper to taste and stir gently.

This quick and easy salad is perfect as a side for breakfast or any meal. Best enjoyed immediately, the Tomato and Cucumber Salad will store for up to one day in the fridge.
